Baked Sesame Ginger Salmon with Greens


Salmon is a fantastic protein to get in once or twice a week as it contains high levels of omega 3’s which help keep our brains and hearts healthy. Paired with fresh crunchy greens this is a super healthy and balanced but unbelievably delicious and quick meal for anyone to enjoy.


Serves – 2

Prep time – 5 minutes  Cook time – 15 minutes


2 tablespoons soy sauce or tamari

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 tablespoon fresh grated ginger

2 garlic cloves, minced

1 teaspoon honey

½ teaspoon sriracha *optional

2 skinless salmon fillets

1 teaspoon vegetable oil

1 bunch bok choy

1 head brocollini

2 cups brow rice, to serve *optional

Sesame seeds

Finely slices spring onion



Heat your oven to 180C fan forced. In a bowl mix together the soy sauce, sesame oil, rice vinegar, grated ginger, minced garlic, honey and sriracha. Keep around 2 tablespoons of the marinade aside for the greens. Place the Salmon in the rest of the marinade and let sit for around 5 minutes. After marinading put the salmon on a lined baking tray and bake for 10-15 minutes depending on how thick your salmon pieces are.


While the Salmon cooks prep the greens cutting them into desired sizes. Put one teaspoon of vegetable oil in a saucepan on medium heat and add the salmon marinade you kept back at the start. Sautee the greens for around 5 minutes until cooked, you want to make sure they are still crunchy with a slight bite to them.


Once the salmon is cooked serve with the greens alongside some brown rice, sesame seeds and finely chopped spring onions and enjoy!
