Delicious San Choy Bow


This super easy dinner is a classic favourite Asian dish that bursts with flavour and has a beautiful crunch from the lettuce cups and fresh ribbons of cucumber and carrot. Drizzled with a splash of lime and fresh coriander this is a spring or summer dinner that will delight the senses.


Serves – 4

Prep time –10 Minutes  Cook time – 15  minutes



1 tablespoon coconut oil or olive oil

½ brown onion, finely diced

2 gloves of garlic, crushed

1cm piece of ginger, finely grated

1 lemongrass stalk, lower third, finely chopped

½ teaspoon ground cumin

1 teaspoon sesame oil

2 tablespoons sweet soy sauce

500 grams beef, chicken, pork or turkey mince

1 Iceberg lettuce, separate the leaves into cups

2 stalks of spring onion, finely chopped

Small handful of coriander leaves, chopped

Juice of one lime

To serve

Cucumber, shredded

Carrot, shredded

Sesame seeds



In a large, non-stick frying pan, heat the oil over a medium-high heat. Add the onion, garlic, lemongrass and ginger and cook for around 2-3 minutes until the onions turn slightly translucent. Then add the cumin and your mince of choice, breaking it up into small chunks, cooking for around 6 minutes until it starts to brown. Then add the sweet soy sauce and sesame oil, continue stirring until the meat is fully cooked. Add the spring onions just before you take the mixture off the heat.

Break the iceberg lettuce into little cups and divide the mince evenly between them. Dress with fresh lime juice, coriander, sesame seeds and ribbons of carrot and cucumber for a nice crunch. Enjoy!
