This is the perfect BBQ lunch or dinner on a warm day that will impress friends and family with fresh juicy prawns and a crispy sweet and spicy salad, it truly is a match made in heaven!
Serves – 4
Prep time –20 Minutes Cook time – 10 minutes
16 green prawns
3 tablespoons extra virgin olive oil
5 tablespoons smoked paprika
½ cup mint, chopped
½ cup coriander, chopped
1 red chilli, finely sliced
2 Lebanese cucumbers, ribboned
2 mangos, peeled and diced
1 lime, juiced
1 tablespoon honey
1 teaspoon rice vinegar
1 teaspoon sesame oil
½ teaspoon sriracha
Prep the prawns however you desire to cook them. Make a paste with the smoked paprika and olive oil and liberally brush each prawn with the paste. Skewer through the neck and tail of 3-4 prawns (depending on the size of your skewers).
Heat BBQ or grilling pan on high. Add the prawns and cook for around 3-4 minutes on each side, or until cooked through. Remove from the heat once cooked and prep the salad ingredients.
Meanwhile, whisk the salad vinaigrette ingredients in a bowl and add to the salad.
Squeeze fresh lime over the prawns and serve.
