Wraps with Spinach Hummus and Crunchy Veggies

 

 

These wraps are loaded with protein, fiber and veggies. You can add chicken or tofu if you want to add more bulk but they taste absolutely amazing simply with the fresh crunchy vegetables.

 

Serves – 4

Prep time – 10 minutes Cook time – 5 minutes

 

Ingredients

4 large wraps

Spinach leaves, around 3 per wrap

1 cucumber, cut into long thin strips

1-2 mixed capsicums, sliced, around 4 slices per wrap

*optional tofu or choice of protein, sprinkle of hemp seeds and parsley

 

Spinach Hummus (makes around 1 ½ cups)

1 can chickpeas, drained and rinsed

2 tablespoons fresh lemon juice

2 tablespoons tahini

1 garlic clove

1/2 teaspoon sea salt

1/4 cup fresh parsley

1/8 teaspoon cumin

1/8 teaspoon smoked paprika

1 ½ cups packed spinach

Freshly ground pepper, to taste

 

Method

To make the hummus, in a food processor combine all of the spinach hummus ingredients until smooth and well blended. Chill until ready to use

To make the wraps spread around ¼ of the hummus on each wrap, then lay down the spinach followed by the cucumber and capsicum. Top with fresh parsley, protein of choice and hemp seeds. Roll the wraps, wrap them in foil and refrigerate until ready to eat or enjoy straight away!
